Each meal at Le Chanteclair was fantastic, but the true highlight of the evening was the way we were warmly welcomed by the co-owners, Murielle and Guillaume. St Martin is so beautiful and our French hosts can be so hospitable and charming when the want to be. The owners of Le Chanteclair and Le Pressior are very
wonderful people and we wish them much success in their new restaurants. You will always need to make reservations at Le Chanteclair and Le Pressior.
We made a huge mistake not revisiting our friends at L' Hibiscus and L'Auberge Gourmande. They are world class culinarians and among the world's best purveyors of Guilty Pleasures. We encourage everyone to visit these wonderful fine dining establishments who value their customers and appreciate their business.
Unfortunately, not all restaurateurs or managers on the French side of St. Martin understand that graciousness, exceptional food and an excellent word of mouth vibe are the keys to year- round business success. There is a definite customer service problem at some fine dining establishments on this island that is condoned by ownership and needs to be addressed immediately.
This serious problem begins with the language barrier and that is very understandable. However, the customer service
challenge continues with under staffing of the dining room and the definite lack of properly-trained wait staff who truly understand the meaning of fine dining hospitality. Each gourmet dinner at on St. Martin will easily cost over $100 per person with wine or drinks. That premium price tag certainly warrants premium service. Their customer service misstep seems to include an unwarranted sense of entitlement towards our U.S. dollars. Perhaps their mounting supply of empty tables will start to rattle their French overconfidence and defuse their anti-American arrogance. This disturbing "French attitude" of a few restauranteurs is very unsettling to say the least and so unfair to so the many wonderful people on St. Martin who rely on tourism dollars and Guilty Pleasures seekers for their very economic survival.
